Douglas Frazier

Executive Director, Dining Services

Doug is a servant leader with a passion for service and delivering exceptional customer service. Doug is a veteran of the United States Army, with over 20 years of experience in culinary services and food service management. Doug and his family recently relocated from Buffalo, NY (Go Bills!). He is excited about the new Residential Dining Program and looking forward to Feeding the Future at GW.

 

Mahlail Shahid

Sr. Customer Support Assoc, Dining Services

Mahlail Shahid joined GW in 2019 and now oversees dining operations for students on the Foggy Bottom and Mount Vernon campuses. Mahlail works closely with various departments and individuals to provide smooth and efficient customer service experiences to all.

In her free time, Mahlail enjoys spending time with her cat, reading, and hiking. She is also a huge sports fan and enjoys playing squash.

 

Kathleen Cossaboon

Vice President of Operations

SHE/HER Kathy has been in customer food service for 20 years. She has lead large teams for the majority of her career in the Mid-Atlantic. Her passion is providing end to end dining experiences for all students with a focus on awesome food. Kathy supports the GW Dining team and is excited about engaging with our students.

 

Daphne Miles

Director of Operations

SHE/HER: Meet our Director of Operations, Daphne Miles! Daphne grew up in Silver Spring, MD a suburb of Washington, DC. Daphne has worked in a variety of roles during her career including Banquet Chef at the US House of Representatives and a General Manager at a Large Public University. She has 40 years of experience working in the food service industry. A fun fact about Daphne is that she played basketball in college and was an alternate for the USA Women’s Rugby team!

Eugene Romero

GW Dining Operations Controller

HE/HIM: A Bronx NY native, Eugene Received his B.A. from GWU in 2006 and his M.B.A from American University in 2020. He has over 15 years of experience in the food and beverage industry and spent the past 7 years in Higher Education. His passion for hospitality is impeccable. He is grateful for the opportunity with Chartwells as Operations Controller and is especially excited for the impact his team will bestow on this university.

 

 

Kay Martin

Sr. Human Resources

Kay is a hospitality professional with a background in event planning, catering and human resources. She is originally from Temple Hills, Maryland and is a “foodie” that enjoys traveling and painting.

Natalie Coppola

GW Dietitian

Natalie is a Registered Dietitian. She received her Bachelor's of Science in Dietetics at James Madison University. She completed her dietetic internship at Keene State College in New Hampshire. She is originally from Syracuse, New York. She has worked with adolescents with eating disorders/who struggled with disordered eating behaviors as well as in acute care clinical settings. In her free time, Natalie enjoys hiking, reading, and trying new food and eatery's.

Shenkman General Manager

HE/HIM: Justin hails from Fredericksburg, Virginia. His foodservice career began young, assisting with tasks in A family restaurants. Since then, he has held multiple positions including Executive Chef, Managing Partner, Director and General manager. He is excited to bring on trend dining options to GW dining, with a focus on sustainability, health and wellness!

 

Yehuda Malka

Shenkman Executive Chef

HE/HIM: Chef Yehuda Malka is a DC area native who has loved cooking for others ever since his early childhood days helping his mom in their home kitchen. After working as an educator for ten years, his passion for cooking led him to a career in restaurant work. Cooking "on the line", he was fortunate to learn from some of DC's most accomplished chefs and restaurateurs, with a focus on perfecting technique and sourcing the best local and sustainable ingredients. Chef Yehuda is excited to showcase his culinary skills and create a one-of-a-kind dining experience for the George Washington University!

Leah Cabral

Pelham Commons General Manager

SHE/HER: Leah is the General Manager of Pelham Commons. Leah began learning culinary skills and techniques at a young age, her passion and curiosity for cooking motivated her to explore good nutrition and healthy lifestyles. She has a vast experience in the hospitality industry – hotel, restaurant, university, and healthcare. Leah graduated from Dominican College with Bachelors in Hotel & Restaurant Management . Values continued education; MBA graduate in Global Management, Lean Six Sigma Green Belt and Certified Dietary Manager. When she's not a Pelham Commons, you will catch her reading books and grilling in the backyard!

 

Matenziion Dastrii

Pelham Commons Executive Chef

HE/HIM: Meet our Pelham Commons Executive Chef, Matenziion D’Astrii, also known as Chef Ten. He is originally from Long Island New York. He has worked as a chef throughout various restaurants, hotels, gourmet markets, and corporate dinning for 27 years in New York, Maryland, DC, and Virginia. Aside from his passion for the culinary field, Chef ten is a watch collector and has over 100 watches!

 

Dwayne Carter

Pelham Commons Dining Supervisor

HE/HIM: Meet our Dining Supervisor, Dwayne Carter. Dwayne has been with the company for over 8 years and began his career at U.S. Coast Guard Headquarters dining team. He enjoys interacting with people and learning about the food service industry. Dwayne has a passion for sports and loves spending time with his kids.

 

 

Amanda Oelze

District House General Manager

SHE/HER: Meet Amanda! Amanda has been in the restaurant industry for the last 22 years. Her top priority is always customer service and team building. She has a passion for leading team members and believes that communication is a key. Amanda's hobby is fashion. She enjoys getting creative and designing bags and shirts. She also like to collect Starbucks cups.
